...and assuming unlimited budget and you can do any modding you want, that will also keep the car drivable, what do you think the numbers would be for the following specs of a 2005 GT?
Max HP
Max Torque
0 - 60 Time
Quarter Mile Time
Top Speed
How long it takes the wife to leave you because you're some kind of crazy nut

Turbos make anything possible. A simple built block and a boost controller and you have a daily drivable 1000 rwhp machine. Now, daily driven, streetable mean different things to different people, but to me, anything more than 500 rwhp is wasted and even thats pushing it. I dont want to do a burnout at 80 mph on the highway when I mash on it. To me, 400 rwhp is perfect, with about 475 being the max Id want. So, Id say,
Max HP- 475
Max Torque-500
0 - 60 Time-traction dependent-4.0 sec?
Quarter Mile Time-thing better run mid 11's, but once again, it all depends
Top Speed-170-180? Depends on gearing.

LOL, a guy i work with has a 66 mustang pushing 1000hp. LOL.
Low 10 second 1/4 in the mile high city.
Totally street legal too according to him. He says it isnt too streetable though. Apparently the thing goes through 10 gallons of gas just getting to work and back, which is a <20 mile round trip.
