motor change

Carburetor based fuel delivery will simplify a few things but you'll have to modify the pickup in your fuel tank (I think Fore makes a hat for it) and install a correct fuel pump but I would definitely not worry about it being insanely hard. The 94-95 cars used speedo gears so you'll be able to get your speedo working again with a little tiny plastic part.

All 302 blocks aren't exactly the same. It's a small point but, the 84 and up HO are roller blocks and have the bosses cast in the lifter valley for the bolts that hold down the lifter retaining bracket. You can use a roller cam in a non-roller block but you have to buy a $400+ set of conversion lifters vs. a $130 set of oem roller lifters.

+1! if you're gonna do it, go all the way. parts cost will be about the same, and the you'll love the 351 as soon as you fire it up. whenever possible, always go with the bigger motor. THERE IS NO REPLACEMENT FOR DISPLACEMENT.

Please, don't use the QA1 K-member. They are meant for drag racing, and not street use, evident by the lack of reinforcements in it.
Also, if you want roller, many trucks didn't come w/ roller cams until much later on, so watch out. But seriously, don't top it off w/ Windsor heads (whether you go 302 or 351). Get a set of nice Cleveland heads, perform the necessary conversion, and make Windsor guys jealous.

You wouldn't want to use a T5 anyway, unless you plan on even making the 302 mild. With all you are doing, go w/ something much stronger. The 351 swap is nothing harder too. Using a Cleveland block can be pricey, as a smaller aftermarket supports it (though it would be worth it), but a Windsor block has complete aftermarket support. As for heads, Cleveland heads aren't supported as well but again, is worth it as even the Modular 4V heads have trouble keeping up w/ their flow numbers. Windsor heads are complete junk compared to it. That's why a 351W block and Cleveland 2V/4V heads would be a great combo (stock or aftermarket). Intakes are available but I don't believe headers are, unless some smaller guys have them (which is very likely).
So really, if you planned for a 302 and want to go w/ a 351W, nothing changes except the stuff affected by the increased deck height. Same thing goes if you want Cleveland heads on top of the 351, except you need to take into account the heads. You can make a lot of juice w/ aftermarket Windsor heads but so much is left at the table, even when compared to stock Cleveland heads. You're call.
