Yes, however without changing the computer setting for when the fan turns on/off it wont do much at all.

You would need a chip or a tuner to change the settings in the ecu.

For best results, you want your fan and t-stat set-up to be the same. You will benefit some w/o the fan setting, but the car will likely run hotter then 180 due to the fan not starting.

i have my fan on a switch ... when i turn the ac on max the fan does not come on ....so i had my car running and unplugged the cooling sensor in the intake and the fan came on but when i tested the sensor for resistance i couldnt get a reading ....would this mean the sensor is bad ? any help would be great.

Well the fail safe in the system for the car is to turn the fan on high when the sensor goes bad or gets no reading.

Change them to turn on sooner. I also have a 180* stat on. For my car on the nitrous tune, I have it so its low speed comes on at 180* and highspeed comes on at 190*. For my n/a tunes its 185* low speed and 195* highspeed. I preffer it to run a bit warmer for better efficiency.
