What the heck does a flywheel do?

Its what the clutch is bolted to and is what you use to get the power from the engine to the tranny.

only manual transmissions have flywheels, right?

Yes as auto cars have what is called a Flex plate and is what the torque converter is bolted onto and that is what transfers power from the engine to auto tranny.
