I'm about to get new tires, and have the stock 17"X8" and wanted to know what size I should get. What is better the 255 40's or 45's??? I want bigger than that, but I Nitto doesn't make a 265, and I heard that 275 is too big for the stock 8"

You will need to go with a 255/45 if you want your tire and wheel height about the same. This is the size I use up front.

As far as the widdest tire goes, I think you can get 275's on them, but I am not sure. I would call Tire Rack and see what they say, just understand that I have always found them to be conservative.

275 fit our rims just fine.

Nittos also run kinda small. Their 315 would be like a 305 to any other tire.

I talked to Nitto about that one and they claim that is not true. But, I have never used Nitto's before myself, but have heard that also.

Ive personally seen otherwise on that. And why would they admit to shafting the customers on size? It benefits some, but hurts others. If I can fit their 275 on my 17x8 stockers, id do that instead of getting 10.5s on the back and running 315's.
