i bought a 02 gt not to long back...and this is what i've done so far

flowmaster....still got the crappy stock piping...still got factory heads
fenderwell intake with a 75mm tb and plenum.....now i aint been able to get it tuned just yet but it is runnin lean according to the comp....so i'm wondering can i drive it this way?

i've ran it and i've mashed it (couldn't resist) but i don't knwo if i need to go back to stock intake til i can dyno or if i'm ok as is

one more thing...after the dyno what do you think i should do next?

I think that you should take off that huge TB and Plenum and put the stock stuff back on so you won't be running lean. You really don't need too much work on the intake side just yet, perhaps a K&N filter and your done.
