why no H pipes?

It is really a popularity thing. Most people prefer an X or they stick with the stock H. After-market H pipes are really not much different then the stocker minus the cats.
Also, the mod motors are generally thought to respond better to the X pipe. You will tend to get more hp higher in the power band with a X and get more power in the lower end with an H, but I have never seen dyno results to prove that.
I think it would be fun to hear a larger, after-market H. I have never had that chance.
