no more difficult than an oil change.

Let the car cool completely. Then siphon or drain about 1 gallon of coolant from the radiator. That will lower the coolant level below the thermostat and allow you to disconnect the upper radiator hose from the thermostat housing without any spillage its not needed but you can.

Remove the two bolts (5/16" socket) that hold the thermostat housing to the PI, and pull the thermostat out of the housing.

When you install the new thermostat, be sure that the side with the spring goes inside the PI and put a new gasket back in.

Fill the radiator back up and let the car run for a bit then check the coolant level again and you may have to put more in after it circulates.

Well you could use the one thats in there if its not ripped or worn too bad. But its just a good idea to just replace it while your in there. And yes you can get one at your local auto store. I used a felpro gasket. It looks like a thickened rubberband but can withstand high temps.

did you notice any difference in your car once you installed it?

It's not really a horsepower gain mod. It's more for the longevity of the car but yes take a look at where your temp guage is and take a look at it it usually is a little bit past the half mark. When installed your fans will kick on sooner than usual and your engine will be a little bit cooler.
