I loves me some venison jerky. I don't get to hunt much anymore but up until a few years ago I ate more venison and wild bird than domesticated meats.

Last deer I ate dressed out kinda small. It only weighed maybe 90lbs standing up and I hit it with a .444Marlin max pressure handload at < 60 yards. The bullet hit facing head on into the neck, penetrated the neck (rupturing the large blood vessels on the way through), entered the spinal column at ~7th vertebrae and proceeded down the spine exploding each vertebrae on the way. It stopped at the end of the rib cage just under the skin on top of the spine. I got less than 20lbs of meat from the whole damned critter.

hehe... overkill? Naw. Interesting side note about the weapon selection: My trusty ol' Mossberg .308 rifle was my primary on that hunt but it took a tumble with me down a hill and the scope was damaged. I brought the .444 for a bear hunt scheduled for later that day. I actually did shoot "at" the deer twice and grossly missed with the .308 before I realized the scope was thrashed... it stood there patiently as hell though while I whizzed those 2 bullets past it, and then while I threw (literally) my .308 out into the woods and walked back to the pickup, grabbed my .444 and jacked exactly 1 round into it. I walked back the 50yds to where I could get a shot (exactly where I was shooting from before) at a still patiently waiting buck, took careful aim @ mid-neck and made my own deer shaped accordion.

Nope.... I knew the .444 was WAY WAY too much gun and I tried to shoot him high enough up the neck that it didn't destroy all the meat or have a chance of rupturing the guts. A half inch higher and it would have just blown his spine in two and dropped him right there. Instead, when I got to the deer I grabbed it by the antlers and lifted up it sounded like a handful of BB's rattling in a milk carton. I knew instantly what had happened.

Ostrich(sp?) meat is really good too!

I love venison, my uncle and cousins hunt almost year round and he makes some of the best burgers I've ever had. Regular beef doesn't even come close.

Default I haven't had deer jerky in nearly a decade.. *cough*r3dn3ck*cough*

1st post!! (insert usual fanfare here) - I'm a long time friend of r3n3ck and he's always sending me his exploits on here, so I thought I'd join up. Hello, all.

BTW - just to add to this..

20lbs may have been an awfully small amt - but I ate some of the jerky from this particular kill.. musta been 8 years ago Very good jerky. I've craved it almost every day since (and had it zero times).

So, r3n3ck.. how bout some more jerky? How much longer do I need to wait before you turn another deer into a slinky?

Not a big fan of denison. Never aquired the taste for it. But my brother in law can make some mean deer jerky. It's all in the marinade.. His deer kabobs and sausage is pretty good too.
