I bought a brand new '07 SRT8 Cherokee and loved every mile of it. The gas mileage was redonkulous but worth it.
The maintenance gets a little pricey, like 8 quart synthetic oil changes, Brembo brake components, 20" runflats... When things like these need replacing, be prepared to spend.
Otherwise, it was a blast to own. I had to sell it after the warranty expired because it was a company car... I do miss it. Lots of fun. Takes off like a recluse spider from the line too.
They hold their value but you should definitely be able to find one for sub-$30k

You're going to keep the GT and play with it right? I mean, you know you're going to miss it if you sell it.. Driving an SUV is no fun, I don't care how "fast" it is, it's still a fat pig that doesn't handle anything like your 'Stang and I promise, you WILL miss it. I know you are going to say that you're bored with it, whatever. I aboslutely promise you that you will miss the GT, no doubt.
And JM2C... I think I'd stay away from Chrysler. As much as I hate to say it, I think I'd rather have the TB SS. The new Explorer's are extremely nice too.
