Default abs light

Is there a way to disable the anti-lock brake system instead of replacing this sensor that sensor so the light would go off?

If you unhook all the sensors and take out the light bulb in the dash you'll be done

Is there an easy way to get the bulb out of the dash? Is that done from underneath or are we talking about pulling the whole dash out?

you have to pull out the gauge cluster but it's really pretty easy. Pull out headlight switch (probably the hardest part) and a couple of screws hold theplastic trim piece. Then a couple more torx bit screws hold the actual gauge cluster in. Take them out and disconnect the couple wire harnasses then twist out the plastic bulb retainer. You could probably even go to a gauge cluster company and downlaod their instructions for the removal, like Simco or Autometer
